Crawfish, Corn & Potato Soup

Ingredients:

  • 2 sticks of butter

  • 3 Ibs. crawfish

  • 2 cans potato soup

  • 1 bag frozen sweet corn

  • 1 8oz. cream cheese

  • onions, bell peppers and garlic

  • 1 pint half and half

  • onion powder

  • garlic powder

  • salt

  • pepper

  • Creole seasoning

INSTRUCTIONS:

Melt butter. Sautee onions, bell peppers & garlic until brown (about 20 minutes).
Add cream cheese and stir until melted.

Add potato soup and stir well. Add corn and stir also. Add crawfish and simmer about 5 minutes.
Then add pint of half and half and cook on low to medium heat for about a half hour. Season to taste.
